Curious why some breeds fall into more than one size category?

The Komondor, for example found on this Dog Breeds  List K can weigh between 80 and 130 pounds, with the females being slightly smaller. 

This puts them right on the border between large and giant.

In many breeds, especially the larger ones, the size range can vary widely.  

These sizes are just an estimate and a way to categorize breeds based on average sizes.
